Pudina Paratha (Mint Roti/Paratha) with Jeera Aloo & Carrot Raita

This my favorite recipe love the mint flavor throughout the rotis for some reason my dad did not like garlic in it people who hate garlic flavors can avoid it this is a good recipe for breakfast or lunch...

For mint roti:
2 Cups Whole Wheat Flour
2 Fist Full Mint(Finely Chopped)
1 Cup Yogurt

1 Tbsp Cumin
1/2 Tsp Chat Masala
1/2 Tsp Pepper Powder

4 to 5 Green Chilies (Finely Chopped)
5 to 6 Cloves Garlic(Finely Chopped)
2 Tbsp Ghee
1 Tsp Salt 
Oil for frying.

Method:
  • Add all the above ingredients in a mixing bowl leaving the ghee out knead to a soft dough if yogurt is not enough little water can be sprinkled to knead into a soft dough.
  • Add Ghee and knead the dough further for 5 minutes cover allow the dough to rest for atleast an hour
  • Take a golf size ball portion of the dough dip into flour and roll out into roti add to a hot tava start to toast the roti and oil and fry toll the roti is cooked serve hot with jeera aloo and raita...Enjoy...:)

For Jeera Aloo:
2 Potatoes (Cubed into bite sized pieces)
2 Tbsp Cumin
3 Green Chilies (Finely Chopped)
2 Sprigs Curry Leaves
1/4 Tsp Chat Masala
1/4 Tsp Chilly Powder
2 Tbsp Oil
Salt as per taste

Method:
  • In a wok heat oil on medium flame add asafoetida and allow to crackle a bit add the cumin and allow to splutter add the potato and salt stir and cover keep stirring occasionally till the potato cooks.
  • Add chilly powder chaat masala chilies and curry leaves stir and serve along with roti.
For Raita:
2 Carrots (Grated)
1 Cup Yogurt
1 Tsp Salt
1/2 Tsp Cumin powder

Method:

  • In a mixing bowl add all the above mentioned ingredients stir well refrigerate serve along with roti...Enjoy...:) 

Mango Treat, Deviled Monaco & Pomegranate Treasure (Biscuit Toppings)


After I posted biscuit chaat recipe i received loads of messages for more biscuit topping ideas here are a few healthy snacks for kids of all ages...:)

Ingredients:
2 Packets Monaco Biscuits
1 Boiled Egg
1 Onion ( sautéed in a sp of oil and a pinch of salt)
1 Tomato (Deseeded chopped into tiny cubes)
2 Sprigs Coriander (Finely chopped)
4 Chillies (Finely Chopped)
1 Tbsp Chilly Powder
Fruits 1 Ripe Mango(peeled and cut into tiny cubes) and 1 Pomegranate
2 Tbsp Lime Juice
4 Tbsp Powdered Sugar
Cream Cheese
Garlic Spread or Mayo
Salt as per taste

 Mango Treat:

  • In a bowl add 3 to 4 tbsp cream cheese and powdered sugar  mix well till smooth texture.
  • Add half the chopped mango and 1/2 tsp lime juice mix well and reserve on a serving bowl. top with rest of the mango as garnish place a cling film and refrigerate to chill.
Once chilled serve topped on monaco biscuits enjoy...:)
 Pomegranate Treasure:

  • In a mixing bowl add 3 to 4 Tbsp Cream Cheese using a fork soften the cheese.
  • Add half the onion , tomato, 2 chilies little bit of coriander 1/2 tsp of lime juice and mix well.
  • Crush four or five biscuits into the mixture mix well add half pomegranate mix well. reserve in a serving bowl garnish using other half of the pomegranate cover and allow to set in the refrigerator.
Once chilled serve with monaco biscuits enjoy...:)
Deviled Monaco:
  • In a mixing bowl crumble the boiled egg using a fork add 2 tbsp garlic spread and 2 tbsp of cream cheese mix till well combined.
  • Check for salt add if needed add the rest of the coriander, onion and 1/2 lime juice mix well and reserve in a serving bowl sprinkle chilly powder.
Serve along with monaco biscuits engage your kids and family to assemble the topping on their own its great fun...enjoy...:)

Sesame Chilly Cauliflower

Recently I was sent a free sample from Hudson Conola Oil along with the package came a recipe book i found this recipe on hudson canola oil book wanted to try the recipe right away there are few changes in the recipe altered as per my taste...

Ingredients:
250 Grams Cauliflower
3 to 4 Tbsp Green masala paste
1 Tbsp Turmeric powder
1/2 Tsp Chat masala
1/2 Tsp Garam or kitchen king masala
3 Tbsp Corn Flour
2 Tbsp Maida/All purpose flour
1/3 Cup Sesame Seeds
Hudson canola oil for frying
salt as per taste.

For garnish: pomogranate seeds, finely chopped coriander and lime
Green Masala Paste:
2 Sprigs Curry lef
5-8 Green Chillies
Fist full mint and coriander
1 Inch Ginger
8 Pods Garlic
  • Add all the ingredients to a mixer jar and grind to a smooth paste add water to grind to form smooth paste.
  • This masala paste can be used for veg and nonveg recipes its a versatile masala paste that can be prepare and stored in a air tight container and forzen.

Method:
  1. In a mixing bowl add the cleaned cauliflower, masala paste, turmeric powder, chat masala, garam masala, salt corn flour and maida mix well sprinkle water if the mixture is to thick the masala paste should coat the cauliflower.
  2. Place a cover on the cauliflower allow to marinate for 10 to 15 minutes.
  3. Spread the seasame seeds on a plate and rool out each floret on sesame seeds.
  4. Heat oil in a wok on medium to low flame drop the florets one by one and fry till golden brown drain.
Serve the cauliflower in a serving bowl garnish with pomogrante seeds coriander and mint.

I was invited to fivestar cafe launch on 19th June. It was truly an extraordinary experience the date time venue every thing was perfect. While talking with Mr.Sanjeev Pant he is looking forward for expansion soon. there is a branch opening in Indiranager shortly.  I wish we had Branches located in north Bangalore too cant wait for an outlet to open near my home.

Finally I got to meet the man behind the scenes research and development Chef Sridhar who was so kind to answer all my questions one by one. the chicken used in the recipes are free range which is a + point they rear their chicken in their own farms located in Bangalore all spices herbs are shipped within India. the oil used for frying is absolutely fresh they do not reuse the oil.  sunflower oil is used in all recipes. Chefs personal picks are chicken cheesy pops, Chicken Dum biryani, Spicy Chicken Sandwich, thai signature and spicy masala.

Finally its my turn..:P I got to savor the best on the menu.

Mutton Soup (Attukari Soup)

 
Made this for my Daddy on the eve of  Fathers Day the most absolute tasty treat for a windy lousy weather this soup has medicinal properties people who are suffering from stuffy nose headache and joints pain will have some relief a simple soup for the soul...
Happy Fathers Day...:)

Ingredients:
1/2 Kilo Goat or Sheep Breast Bones and Meat

1 Tbsp Chilly Powder
1/2 Tsp Turmeric Powder
1/2 Tsp Coriander Powder
1/2 Tsp Whole Black Pepper Corns
2 Inch Cinnamon Sticks
3 Pods Cardamom
1/2 Tsp Fennel Seeds

1 Tbsp Ginger Garlic Paste
1 Large Onion(chopped into roughly)
2 Large Tomato(chopped into tiny cubes)
3 Red or Green Chillies
Fist Full Mint and Coriander(roughly chopped)
1/2 Tsp Lime Juice
5 to 6 Pods Whole Garlic
Salt  as per taste
1 Tbsp Oil and Ghee
 Method:
  • In a pressure cooker add oil and ghee heat on medium flame add the whole spices and fry a bit once the spices start to crackle add ginger garlic paste and fry till raw flavor has gone.
  • Add chopped onion whole garlic and tomato fry a bit allow to reduce a bit add the dry spices chilly powder turmeric powder and coriander powder fry a bit add the meat and give it a good stir allow to fry a bit.
  • Add coarse salt and fry a bit add 3 cups water and stir well bring to a boil cover and cook till 3 to 4 whistles.
  • Once the meat has cooked add coriander mint and lime juice stir well
Serve hot with rice or bread ...Enjoy...:)

Kathirikai Karuvadu Varuval (Brinjal Dry Shrimp Fry Side Dish for Southindian Meals)

One of my original recipe experiments again turned out awesome...

Ingredients:
200 Grams Brinjal(cubed)
4 Green Chilies (finely chopped)
1 Medium Onion(roughly chopped)
3 Tbsp Oil
1 Tbsp Turmeric
Salt as per taste

For Tempering: 
1 Tsp Mustard Seeds
1/2 Tsp Cumin Seeds
1/2 Tsp Gram Dhal
A pinch Asafoetida
For Masala Powder:
2 Tbsp Split Chickpeas 
15 Whole Dry Red Chilly
2 Tbsp Pepper Corns
Fist Full Garlic Pods
Fist Full Curry Leaves
1 Tsp Asafoetida
1 Cup Dry Shrimp
  • Dry roast all the ingredients given in the masala list one by one on a medium flame once dry roasted place on a plate and allow to air dry.
  • Add the ingredients to a mixer jar and blend to a fine powder.
  • This shrimp powder can be stored in a air tight container in the freezer for months and can be used for many recipes i will post a few authentic tamil cuisine which is totally forgotten in this mordern era... 
Method:
  1. Heat oil in a wok temper with mustard allow to splutter then add cumin and gramdhal allow to splutter a bit a asafoetida and fry a bit add curry leaves onion and chilies fry till onion turns light pink in color.
  2. Add the chopped brinjal turmeric and salt fry a bit add 1/2 cup of water cover and allow to cook till the vegetable is almost done.
  3. Add 3 to 4 tbsp of the shrimp powder and fry till oil separates from vegetable and the brinjal should turn light brown in color give it a good stir and serve hot with rice and rasam...Enjoy...:)

Pizza Samosa

Trust me this was my ultimate experiment was doubtful how on earth is this gonna taste...it was super awesome yaara loved it...tell me who wouldn't love  a hot samosa with pizza flavors and cheese melting inside its like eating double trouble all at once...:P calorie conscious people can close their eyes...:D Whatever toppings are used in pizza can be stuffed into a samosa but make sure the product is chopped into tiny pieces it will be easy for stuffing...:)

Ingredients:
1/2 Bell Pepper (Chopped into tiny cubes)
3 Cubes Cheddar Cheese (Chopped into tiny cubes)
50 Grams Paneer/Cottage Cheese(Chopped into tiny cubes)
Pizza Seasoning / Italian Seasoning 
1/4 Tsp Chilly Powder
Oil for frying
Salt 

Filling: 
  • Heat a wok add 2 tbsp oil fry the bell pepper on a medium flame till its soften a bit add paneer chilly powder salt and fry for a minute add the 1/4 sp italian seasoning and fry.
  • Allow to cool completely mix in the cheese and reserve. 
For Dough:
1 1/2 Cups Maida/all purpose flour
1 Cup Yogurt 
1 Tbsp Ghee
Salt

Prepare Dough:
  • In a mixing bowl add maida salt and yogurt knead the dough if needed sprinkle water add ghee and knead  till the dough is soft cover allow to rest for 1 hour.

Method:
  • Roll out the dough into thin chapati using a round cutter cut out into equal rounds.
  • Add 1/2 tsp of sauce and top with filling fold and seal the edges. secure the edges using a fork it also gives a cute crimp effect on the edges.
  • Heat oil in a wok on medium flame fry out the samosa till light golden in color drain the excess oil out on a paper towel.
Serve hot along with chai...enjoy...:)

Waring while serving please tell the person there is hot melting cheese inside the samosa it may burn their mouth...if they eat more than expected I'm not responsible...DHANYAVAD.
