One Pot Beetroot Mutton Curry


It was one of those over cast days, I was in no mood for grocery shopping or cooking...I guess everyone of us face the same issue sometimes left with scanty ingredients in the fridge horrible weather...humm...

Left with 1/2 a beetroot and 1/2 kilo of meat in the fridge I had to come up with a recipe which is tasty and exciting quite challenging aye...well not to worry this is one recipe which will warm your soul and put a smile on your face that's exactly what happen to me was over joyed with the out come of my dish.

overall was happy that i made best use of what ever ingredients I had...prepared some hot rotis , rice and the mutton curry was yum...we totally enjoyed our dinner on a stormy night...

Ingredients:
500 Grams Mutton
1/2 Beetroot Chopped into Bite Size Chunks

1 Tbsp Chilly powder
1 Tbsp Coriander Powder 
1/4 Tsp Turmeric 

2 Onions 1 Tomato Puréed togeather in a blender
2 Sprigs Coriander 4 Green Chillies 1 inch Ginger and 10 Pods Garlic Grind to a smooth Paste 

Spice blend:
1 Tbsp Whole Pepper corns, 1 Tsp Cumin, 1 Tsp Fennel, Small Piece Nutmeg, 1 small Piece Stone Flower, 5 Cloves, 4 Pods Cardamom, 3 Inch Stick Cinnamon, 2 Bayleafs, 2 Strands Mace, 1 Black Cardamom: Dry roasted all the ingredients on a low flame allow to cool a bit add to a blender and grind to a coarse powder format  we will need 1 Tbsp of the Spice Blend.

2 Tbsp Oil
2 Tbsp Ghee 
Salt as per taste
Lime Juice and Coriander For Garnish...

Method:

  • On a medium flame place a pressure cooker add oil and ghee once the oil heats up add the ground chilly paste along with chilly powder, coriander powder, turmeric and spice blend fry till oil surfaces.
  • Once the oil surfaces on the chilly masala add the onion and tomato paste fry till the oil surfaces.
  • Once the oil surfaces and the onion has cooked, Add the meat salt as per taste and chopped beets toss and fry till meat releases its moisture measure 1 cup water and add to the meat place the lid and whistle cook for 4 to 5 whistles or until the meat is well done.
  • Add lime juice and chopped coriander give it a good mix and serve hot with steamed rice or roti...Enjoy...:)
